PATTERN OF QUESTION PAPER ON THE UNIT SYSTEM.

 

The pattern of question paper as per unit system will be broadly based on the following pattern

 

(1) Syllabus has been divided into units equal to the number of question to be answered in the paper. On each unit there will be a question either a long answer type or a short answer type.

 

(2) Number of question will be in accordance with the unit prescribed in the syllabi for each paper i.e. there will be one question on each unit.

 

(3) For every question long answer type or short answer type there will be an alternative choice from the same unit. However, there will be no internal choice in a question.

 

(4) Division of marks between long answer and short answer type question will be in the ratio of 40 and 60

 

(5) Each short answer type question shall contain 4 to 8 short sub question with no internal choice.

OBJECTIVES :

1. To understand the role of nutritionist and dietitian.

4. To get training in nutrition counseling and educating patients.

5. Know the Physico- Chemical principles underlying food preparation.

6. To gain knowledge of food service management and develop vision in becoming entrepreneurs.

4.4 Herbs: Introduction of herbs, Importance of herbs in hygiene and cosmetic.

4.5 Study of the following medicinal and cosmetic herbs:

Herbs sources, properties , medicinal values and uses Aloe , Wheat grass, Carrot, Cucumber, Turmeric (Haldi), Ambahaldi, Jeshtamadh, Jatamansi, Neem, Tulsi, Amla, Til, Dates, Garlic, Asparagus, Cardomon, Coconut, Clove, Coriander, Cinnamon, lemon, Femugreek (grass)

4.6 Herbal Medicine for following medicines:-

Loss of Appetite, Diarrhea, Loose motions, Jaundice, Cough, Warms, Headache, Fever, Pimples, Asthma, Constipation, Obesity, Diabetes and Mellitus

 

Unit-V

5.1 Types of food service:

School, industry, hospitals and commercial formal and informal food service. Indian and western techniques of writing and serving menus.

5.2 Standardization of recipes:

Organization for large quantity food production calculation of food costs and portion Control.

5.3 Serving foods to large groups:

Table service, dining room management, Delivery and service of foods in different systems.

5.4 Sensory Evaluation of food.

Special Note

Etiology, symptoms, clinical findings and treatment of all the diseases mentioned above are to be considered briefly with special reference to dietary treatment.

 

Practical And Project

a. Planning, organization and preparation of foods for parties (atleast 50 people)

b. Sugar, Cereal and Pulse cookery (Two recipe to be prepared for each with demonstration)

c. Planning and preparation of diets in any five major disorders mentioned in theory and calculating nutritive value.

d. On the job training of 15 days in hospitals / clinic / physicians chamber / Hostel / Food Industry / using following steps :

i) Keeping record of medical history of patients.

ii) Study of nutritional considerations of the patients.

iii) Planning therapeutic diets and computation nutritive value.

iv) Counseling and education the patient.

v) Preparation of report.

e. Organizing camps / lecture series / demonstration oh holistic approach in solving health related problems (Yoga, Naturopathy, Panchakarma Chikitsa, Alternative Medicines etc.)

f. Planning, organization, preparation, packing, labeling and marketing of foods / herbal medicine/ cosmetics.

Demonstration on the preparation of herbal medicines and cosmetic products (Chyawanprash, Churna, Kadha, Face Pack, Conditioners, Utne etc.)
